Patriotic Ice Cream Sandwiches

1 (15.25-ounce) box Red Velvet Cake Mix 1/3 cup All-Purpose Flour 1/2 cup Water 1/3 cup Vegetable Oil 3 large Eggs Vanilla Ice Cream (slightly soft) Red, White & Blue Sprinkles Preheat oven to 350 degrees.

Grease an 11×17 inch pan, then line it with wax paper and set aside. In a large mixing bowl and with an electric mixer, beat together the cake mix, flour, water, vegetable oil and eggs for a few minutes to thicken. Add the batter by rounded measured tablespoons onto the prepared pan. Bake on the 3rd (middle) rack for around 8 to 10 minutes.

Remove from the oven and let cool completely, then remove from the wax paper with a metal spatula. Repeat the process with the remaining batter.

While the cookies cool, take out the ice cream and let it slightly soften. Make sure the ice cream isn’t too soft or it will be runny and not too hard or it will be difficult to work with. Next, add the red, white and blue sprinkles to a large plate. Using a small spoon, add the ice cream to a cookie, then top with another cookie. Roll the sandwich in the sprinkles, then place in a container or platter. Once all cookies have been done, place the container in the freezer until ready to serve.

*Please note that you can use different cake mixes and ice cream for this recipe.
